We made chili in our crockpot for the very first time. We didn’t really pay attention to our exact measurements and planned on making it again so we could share our recipe with the world(it’s to die for…) It’s inspired by Roger’s grandma’s signature stuffed bell peppers except in a chili/stew style. It tastes like albondigas soup with a mixture of hamburger and delicious melt-in-your-mouth steak.
Such a funny story, we tried making the same thing just the other weekend; except Roger added 80% of the bottle of chili powder while I was in the bedroom reading(can’t trust dudes and spices!) It didn’t taste the same at all. It was more like spice up your bum and give you heartburn chili, lol. Silly. I think next time we’re going to add potatoes because well, it sounds good.
Third time’s the charm and we got the measurements correct to our liking. Try it, comment and let me know what you think.

- 1 Jalapeno (de-seed and chopped)
- 5 Juicy limes
- 3 tablespoons Weber Kickin' Chicken spice
- 2 teaspoons Chili Powder
- 1/4 cup Olive Oil
Optional
- 1 can Pinto Beans
- 1 can Kidney Beans (add bean water to crockpot. (Omit if Paleo- Add a cup of bone broth to the mix rather than beans.))
Directions
| Step 1 | |
| Saute cubed steak and ground beef in butter/coconut oil with chopped onions until caramelized and browned. | |
| Step 2 | |
| Add chopped garlic, tomatoes, green bell pepper and jalapeno; kickin' chicken, chili powder, cilantro, lime juice and basil to the crockpot. Then add the beans(or broth) and squeeze lemon or lime juice all over. | |

| Step 4 | |
| Wake up to a delicious meal! I'll eat it with tortillas or even just in a bowl. | |

I’m picky about chili also! Let me know how it goes :)
This looks delicious! I think I’m going to have to try to make a vegetarian version using your recipe. And adding potatoes does sound good!

Thank you! Oh yeah, that should be easy to do. Let me know how it goes because we love eating veg meals too! :)
This looks delish! I love chili and I never thought of making it in the slow cooker before. Something new for me to try!

The crockpot makes it soooo much easier, and tastier. The meat ends up being more tender and flaky. Plus, you usually end up with some left overs for the week; which is always good! :)
Ummm, I do love a good chili and you can’t beat a crock pot to help make to that much easier. I’ll have to give this a try.

WOW this sounds amazing! I’ve been needing to invest in a crock pot for a while now and I feel like you just gave me the push that I need to go out and make the purchase! Yum!
I love the crock pot, such a great invention. I got mine at Ross for like 15 dollars and we’ve gotten so much use out of it. We save a ton of money too because we end up making food in bulk and freezing left overs. It’s the easiest way to cook and the meat turns out amaaaaazing! Everytime! We made bone broth with it, cook whole chickens, etc.
